Spanish Lentils (lentajas)
I was looking for a new recipe for lentils. I found a few recipes that looked Delicious. The best recipe was Spanish Lentils Stew (lentajas)
I used Spanish Lentil Soup, I did have to change it to make it vegetarian.
1 onion, chopped
4 carrots, chopped
garlic, chopped
3 handful cherry tomato, chopped
1/2 bag frozen peppers
3 small potatoes, chopped
1 soy chorizo, chopped
1 cup shredded kale
2 cups lentils
4 cups veggie broth
1 t cumin powder
1 t sweet paprika
1 pinch saffron
Cook onion and garlic in water until starts to turn color
Then add all other ingredients in a pot and cook for 30 to 45 minutes until veggies and lentils are cooked

Lentil Shepard's Pie
With all of the hard work with the construction of the new home, I was craving some comfort foods!
What type of dish can make one feel good?
hummmm
Mashed potatoes layered on a pile of veg and lentils!
This cottage (Shepard pie) was delish!!
I must make it again!!

Napa Cabbage with Chickpeas and Peanuts
This salad is from my Maryland's Pick produce.
Napa Cabbage with Chickpeas and Peanuts
1/2 a head Napa Cabbage, shredded
2 lg carrots, shredded
1 red pepper, chopped
1/2 c parsley
1 c chives, chopped
3 cups chickpeas
combine and mix
dressing:
lime juice
soy sauce
onion
agave
hot sauce
water
ginger
apple cider vinegar
combine in blender and mix
Add dressing to the salad mix.
Toss
Serve cold

Black Beans and Rice Salad
Black Bean and Rice Salad
6 cups cooked brown rice
6 cups cooked black beans
4 carrots chopped
2 green onions chopped
1 bag frozen corn
8 T rice wine vinegar
1 T chili powder
1/4 t cumin
1/2 t oregano
few shakes of garlic powder
1 pint cherry tomatoes
1 jar salsa (I used 1 jar chunky salsa)
1/4 head of kale, torn into small pieces
Combine all ingredients in a large bowl. Adjust seasonings for your taste.
We ate this salad with corn chips! Yummy!!
